What's for Dinner Tonight... A.K.A: What My Kids Will Eat: Beef Taco Skillet

Figuring out what to make for dinner can be frustrating if you are short on time, money and adventurous eaters. One site I love to consult for recipe ideas is Campbell's Kitchen. They are always quick, easy and cheap. Here's what's for dinner tonight:

Beef Taco Skillet

Ingredients:

1 pound ground beef
1 can tomato soup
1 cup mild or medium salsa (mild in our house)
1/2 cup water
4 flour tortillas
1 cup shredded chedder
1 cup canned corn

Prep:

1. Cook beef in skillet, drain.
2. Dump in everything else but the cheese. Bring to boil, reduce heat to low and cook for 5 minutes. Stir in cheese.

  2. Hey Kara! Really cool blog! Here's a twist from my days of drum corps that is similar to this, plus I think the kids will have a BLAST! =)

    It's called "Taco in a Bag". Basically, prepare your beef, lettuce, tomatos, onions, cheese, salsa as you would normally. Instead of using taco shells / tortillas, you give every person one of the individual "fun size" bags of Doritos (lightly salted works best, but those are tough to find -- Cool Ranch works well, too). Open up the bag, dump in your fillings. Then fold over the top of the bag + smush it up, breaking the chips. Done! Eat right out of the bag. It's certainly not high-class, but it's a lot of fun! Plus, it lets the kids help in the "cooking" ;-)
